Title: Green Tomato and Sausage Casserole

Yield: 4 Servings
1 | tb | Butter or oil |
1 | c | Green tomatoes; in 1/2" pieces |
1 | tb | Chopped parsley |
1 | md | Onion; coarsely chopped |
2 | sm | Green chiles; sliced, optional |
1 | lg | Carrot; sliced or chopped |
8 | oz | Smoked sausage; thinly sliced |
1 | c | Rice |
2 | c | Chicken broth |
Saute onion, green tomato, chiles and carrot in butter or oil for a few minutes. Transfer to a 2 1/2 qt casserole. Stir in rice, sausage, and parsley. Heat broth to boiling and add to casserole. Cover tightly and bake at 350 F for about 40 minutes or till rice is done and liquid is absorbed. Check after about 30 minutes and add a little additional broth or water if it seems too dry. Makes about 4 servings.
