Title: Cherry Almond Upside Cake

2tbMargarine
1/4cBrown sugar
1/4cAlmond slivers
2cCherries; frozen
1/4cMargarine
2/3cSugar
1 Egg
1/2tsAlmond extract
1 1/4cFlour
1/2tsBaking powder
1/2tsSalt
2/3cLowfat 2% milk

Combine butter and brown sugar in 9-inch round cake dish. Microwave on HIGH for 1 to 1 1/2 minutes or until margarine is melted. Add almonds and cherries. Microwave HIGH uncovered for 3 to 4 minutes to thaw cherries. Set aside.

Microwve HIGH butter for cake in microwave safe mixing bowl. 30 to 45 seconds or until softened. Beat in sugar until creamy. Add egg and almond extract; beat until light. Add flour, baking powder, salt and milk; mix just until smooth. Pour batter into pan. Microwave on MEDIUM-HIGH (70%) uncovered, 8 to 9 minutes or until edges are set, rotating pan once. then, microwave HIGH 3 to 4 minutes until center is set, rotating pan once. Let satan in oven 5 minutes. Invert onto serving plate. Serve warm or cool. If desired, top with whipped cream and toasted almonds. Serves 8.
