Title: Chicken Kapama Style

Yield: 4 Servings
3 | lb | Chicken; (up to 4) |
4 | tb | Butter |
1 | lg | Onion; chopped |
2 | Cloves garlic; minced | |
1/2 | c | White wine |
1 | Inch cinnamon stick | |
1/4 | ts | Sugar |
1 | Bay leaf | |
16 | oz | Can whole tomatoes; chopped |
2 | tb | Tomato paste; or |
8 | oz | Can tomato sauce |
Salt and pepper |
Cut chicken into serving size pieces; wash and towel dry. In a heavy saucepan melt butter; brown chicken pieces. Remove to a plate and set aside. Over Medium heat, add onion and garlic to saucepan and brown lightly. Add remaining ingredients and simmer for 1- minutes. Return chicken to pan an simmer for 45 minutes or until chicken is tender. Remove bay leaf and cinnamon stick. Serve with spaghetti or macaroni and grated cheese.
