Title: Fig Cake (Sikopita)

2 | c | Flour |
1 1/2 | c | Sugar |
1 | ts | Salt |
1 | ts | Baking soda |
1 | ts | Cinnamon |
1 | ts | Nutmeg |
1/4 | ts | Cloves; ground |
3 | Eggs | |
1 | c | Fig preserves |
1 | c | Oil |
1 | c | Buttermilk |
1 | tb | Vanilla |
Glaze: | ||
1/2 | Stick butter; (1/4 cup) | |
1/2 | c | Sugar |
1 | tb | Light corn syrup |
1/4 | ts | Baking soda |
Heat oven to 325 F. Combine cake ingredients and mix well. Pour into a 9x13" greased cake pan; bake for 45 minutes. Make glaze by combining ingredients and boiling for 3 minutes. Pour over cake while cake is warm. May be served with whipped cream or whipped topping or plain. Note: applesauce may be substitute for fig preserves.
