Title: Broiled Lamb Chops with Mustard Honey Glaze

Yield: 4 Servings
1/4 | c | Dijon mustard |
1/4 | c | Honey |
1 | Clove garlic; minced | |
1/4 | ts | Ground ginger |
4 | lg | Lamb shoulder chops; round bone or blade |
Mix together first 5 ingredients. Trim excess fat from chops; slash through remaining edge fat to, but not into, meat at 1-inch intervals.
Place chops on a rack in a broiler pan. Generously spread chops with about half the mustard mixture. Broil about 3 inches below heat for 5 minutes, turn chops and spread with remaining mustard mixture. Broil for about 5 more minutes or until chops are browned and meat near bone is still pink when slashed.
