Title: Whipped Cheese Topping

1 | lb | Cottage cheese; lowfat |
2 | tb | Sugar |
1/2 | ts | Orange rind; grated |
2 | tb | Orange juice |
In food processor or blender, whirl all the ingredients for about 30 seconds or until smooth. Will keep, covered, in the refrigerator for 1 or 2 weeks. Makes 2 cups (each serving is 1 tablesppon)
