Title: Quick Side Dish of Beans

4 | c | Cooked white beans, heated* |
3 | To 4 tb red onion, finely chopped | |
3 | tb | Each olive oil and raspberry vinegar |
Fresh black pepper, to taste |
*Use any white beans: navy, cannellini, white kidney beans, etc.. Two 19 ounce cans, drained and rinsed well, equals 4 cups.
Heat the beans in about 1 cup of water. Drain well and toss with the onion. Whisk together the oil and vinegar and dress the beans. Top with a grind of pepper.
