Title: Corn & Green Onion Pancakes**

1cAll-purpose flour
2tbToasted wheat germ
2tsBaking powder
1tsBrown sugar
1/2tsSalt
1 1/2cSkim milk
2lgEggs
2tbVegetable oil
2 1/4cCorn; fresh or frozen
  ; thawed
3/4cGreen onions; sliced, tops

Mix flour, toasted wheat germ, baking powder, brown sugar, and salt in a large bowl. Blend nonfat milk, eggs, 2 tbs. veg. oil and 1 cup corn kernels in blender or processor until almost pureed. Add dry ingredients and blend using on/off turns just to combine. Pour batter into bowl. Mix in green onions and remaining 1 1/4 cups corn. Can be prepared 2 hours ahead. Cover and chill.

Spoon batter by 1/4 cupfuls onto greased hot griddle and cook until they bubble. Turn and cook 1 minute. Serve with maple syrup.
