Title: Second Time Around Soup with Carrot and Chicken (Mf)

2 | c | Chicken broth |
1 | c | Tomato or vegetable juice |
1/4 | c | Long grain rice |
1/2 | Boneless chicken breast; cooked -cut into 1/2 inch dice | |
Green onion; thinly sliced |
Bring broth, juice and rice to a boil and simmer for 15 minutes. Add cooked chicken and simmer 5 minutes longer. Ladle out and garnish with green onion.
