Title: Okra, Corn and Tomato Melange

Yield: 6 Servings
4 | Strips bacon; fried crisp | |
4 | tb | Bacon drippings; drained |
1 | Onion; chopped fine | |
3 | c | Okra; cut up |
4 | Tomatoes; peeled and diced | |
2 | Ears corn; scraped | |
1/2 | Green bell pepper; chopped | |
1 | ts | Sugar |
Salt and pepper; to taste | ||
1 | ds | Tabasco sauce |
Stir onion and okra in bacon drippings, add corn kernels, and cook for 10 minutes, stirring constantly. Add tomatoes, green pepper and seasonings. Cover and simmer until done (about 25 minutes) stirring occasionally. Correct seasoning, pour into serving dish and sprinkle with crumbled bacon.
NOTES : This is a wonderful summertime recipe when you can get all ingredients fresh (either homegrown or from a neighborhood vegetable stand. ) We have a good one not too far from our house.
