Title: Deviled Eggs a la Jadi
Categories: Tuna Appetizer Cheese
Yield: 18 Servings
9 | Hard-boiled eggs; peel shell | |
3 | Scallions; finely chopped | |
1 | 12 oz. can tuna; drained and flaked | |
1 1/2 | ts | Dry mustard |
3/4 | c | Soy sauce |
1 | tb | Sesame or peanut oil |
1 1/2 | ts | Lemon juice |
Salt and freshly ground black pepper | ||
Paprika |
Slice eggs in half, lengthwise. Remove hardened yolks to a mixing bowl. Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste. Mix well. Fill egg white halves with tuna/egg yolk mixture. Sprinkle tops with paprika.
Note: Crab meat or abalone may be substituted for the tuna.
