Title: Deviled Eggs a la Jadi
Categories: Tuna Appetizer Cheese
Yield: 18 Servings

9 Hard-boiled eggs; peel shell
3 Scallions; finely chopped
1 12 oz. can tuna; drained and flaked
1 1/2tsDry mustard
3/4cSoy sauce
1tbSesame or peanut oil
1 1/2tsLemon juice
  Salt and freshly ground black pepper
  Paprika

Slice eggs in half, lengthwise. Remove hardened yolks to a mixing bowl. Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste. Mix well. Fill egg white halves with tuna/egg yolk mixture. Sprinkle tops with paprika.

Note: Crab meat or abalone may be substituted for the tuna.
