Title: Broccoli Chowder

Yield: 8 Servings
2 | lb | Fresh broccoli |
3 | c | Chicken stock |
3 | c | Milk |
1 | c | Chopped cooked ham |
2 | ts | Salt |
1/4 | ts | Freshly ground pepper |
1 | c | Half and half cream |
2 | c | Grated Swiss cheese |
1/4 | c | Butter |
Wash the broccoli and remove any leaves and coarse stem ends. Place the broccoli in a large kettle and add half the stock. Bring to a boil, then reduce the heat and cover. Simmer for 7 minutes or until the broccoli is just tender. Remove the broccoli from the stock with a slotted spoon and chop coarsely. Add the remaining stock, milk, ham, and salt and pepper to the stock in the kettle and stir well. Bring to a boil over medium heat, stirring occasionally. Stir in the cream, cheese, butter and broccoli and heat until the cheese is melted. Do not boil.
