Title: Cream of Broccoli Soup (With No Cream)

Yield: 4 Servings
1 | md | Onion, chopped |
1 | Garlic clove, crushed | |
1 | ts | Vegetable oil |
1 | Bay leaf | |
1 | lb | Broccoli, chopped |
2 1/2 | c | Vegetable stock or Broth |
1 | sm | Potato, cubed |
pn | Salt to taste | |
pn | Pepper to taste | |
1/2 | Lemon, juice of | |
1/4 | c | Low fat yogurt |
Saute onion and garlic in the oil with the bay leaf, about 8 minutes. Add broccoli, stock and potato. Simmer, gently, covered for 10 minutes. The broccoli should be tender but still bright green. Remove bay leaf and let soup cool a little.
Puree soup in a blender (do not make it entirely smooth). Season to taste and add lemon juice.
Add dollop of yogurt on each bowl of soup just before serving
