Title: Apple and Oat Bran Muffins

1 1/4 | c | Whole Wheat Flour |
1 | c | Oat Bran |
1/3 | c | Packed Brown Sugar |
2 1/2 | ts | Baking Powder |
1/4 | ts | Baking Soda |
1/4 | ts | Salt |
1/4 | ts | Ground Nutmeg |
1/4 | ts | Cinnamon |
1 | c | Buttermilk |
2 | x | Egg Whites |
2 | tb | Cooking Oil |
3/4 | c | Shredded, peeled Apple |
In a med bowl stir together flour, oat bran, brown sugar, baking powder,
baking soda, salt, nutmeg, and cinnamon. Set aside.
In a small bowl combine buttermilk, egg whites, and oil, Add to dry
ingredients; stir just till moistened. Stir in shredded apple. Store
batter, tightly covered, in the refrigerator for up to 5 days.
To bake, spray muffin cups with non-stick spray coating. Spoon about 1/4
cup batter into each muffin cup. Bake in a 375 deg F oven for 18-20 minutes
or till a toothpick inserted near the center comes out clean. Makes 12
