1 | c | Cooked great northern or pinto beans |
2 | lg | Eggs |
1/4 | c | Butter or margarine |
1 | c | Packed brown sugar |
1/4 | c | Light Corn syrup |
1 | ts | Vanilla extract |
1/2 | ts | Ground nutmeg |
| | Currants |
24 | | Prepared 3-inch tart shells |
Mash or puree beans. Beat eggs; add to beans. Add the next five ingredients
and beat well. Place a few currants in each shell. Pour in the filling.
Bake at 350' for 20 minutes or until nicely brown. (Variations: Maple
flavoring can be substituted for vanilla extract, and pecans or walnut for
