Title: Sweet and Sour Pork

Yield: 4 Servings

1/2cUnsweetened pineapple juice
2tsRice vinegar or cider vinegar
1tsSherry
1/2tsLight soy sauce
1dsHot pepper oil
1dsGround ginger
1dsGround allspice
1tsCornstarch dissolved in
2tbWater
  Vegetable oil spray
12ozPork loin, cut into 1/4-inch-thick strips (julienne)
2tbMinced onions and leeks, or scallions
1/4cSliced green bell pepper
1/4cSliced onion
2tsChopped fresh parsley
1/4tsFreshly ground black pepper

In a saucepan over medium-high heat, combine first seven ingredients. When mixture is hot, stir in dissolved cornstarch. Cook over medium heat, stirring constantly, until sauce comes just to a boil and begins to thicken. Cover and remove from heat.

Spray a nonstick skillet with vegetable oil. Add pork and saute until no longer pink. Remove from skillet and set aside.

Sprinkle onion-leek combination, sliced bell peppers and onions over bottom of skillet. Place cooked pork over vegetables and sprinkle with parsley and black pepper. Cook 4 to 5 minutes, add sauce and serve.
