Title: Crunchy Waffle

Yield: 1 Recipe

1 1/2cAM Whole Wheat Flour
2tsNon-alum baking powder
1/2tsGround ginger
2 Eggs
1 1/2cButtermilk; OR...
1c-{Buttermilk -AND-
1/2c- Water}
1/4cMaple syrup or honey
1/4cAM Unrefined Vegetable Oil
1/2cFinely chopped pecans
  Strawberry-banana sauce - (see recipe below)
  Plain yogurt
STRAWBERRY-BANANA SAUCE
1 1/2cMaple syrup
1cSliced bananas
2cStrawberries - (hulled and halved)

Waffle: Combine dry ingredients; stir well. Beat eggs until thick and lemon colored. Add flour mix, buttermilk, syrup and oil. Beat until smooth. Cook on hot, lightly oiled waffle iron, sprinkling the top with chopped pecans before cooking. Serve with topping of the following sauce and plain yogurt.

Strawberry-Banana Sauce: Combine all ingredients in a heavy saucepan. Cook over medium high heat 10 minutes, stirring occasionally, serve hot.
