Title: Winter-White Chili

1/2 | lb | Boneless pork loin; (or 2 boneless pork chops) cut into 1/2" |
1 | Onion; chopped | |
1 | ts | Oil |
1 1/2 | ts | Ground cumin |
1/4 | ts | Garlic powder |
1 | c | Cooked wild rice |
1 | cn | 16-oz. chick peas; drained |
1 | cn | 4-oz. diced green chilies; drained |
1 | cn | 16-oz. white kernel corn; drained |
1/8 | ts | Hot pepper sauce |
1 | cn | 14.5-oz. Chicken broth |
In a 4-quart saucepan, saute onions and pork in oil over medium- high heat until onions are soft and pork lightly browned, about 5 minutes. Stir in all remaining ingredients except parsley. Cover; simmer 20 minutes. Makes 6 servings. Calories 341 Protein 23 g Sodium 450 mg Fat 6 g Cholesterol 22 mg Calories from fats: 22%
