Title: Marinated Cucumbers
Categories: Diabetic Vegetable Salad Side Rice
Yield: 6 Servings
6 | lg | Cucumbers, sliced |
1 | lg | Onion; chopped |
3/4 | c | Rice vinegar; |
1/2 | ts | Seasoned salt; |
2 | tb | Olive Oil; |
1/8 | tb | Pepper; coarsly ground |
Combine all ingredients together in large bowl. Mix well. Cover. Refrigerate four to six hours. Serve with salad, or by itself.
