Title: Fresh Squash and Onion

Yield: 4 Servings
2 | lb | Squash; yellow |
1 | md | Onion; finely chopped |
1/2 | ts | Salt; |
ds | Sugar;* | |
1/2 | c | Water |
2 | tb | Butter (or marg.); melted |
* Use your favorite sugar substitute Wash squash and cut into 1-1/2" slices. Place in saucepan with onion, salt, and sugar; add 1/2 cup water. Cover tightly and steam about 10 minutes. Add butter and stir gently. Food Exchange per serving: 1 vegetable exchange, (make it work) NO'S NOTE: This would be excellent way to fix squash for the diabetic. All so I would cut down on the margarine. Note: This is my VERY FAVORITE way to eat squash (and we eat LOTS of squash) . (Nancy)
