Title: Island Sweet Potato Pudding

12 | oz | Cooked sweet potatoes; peeled and cut in chunks |
1 | md | Ripe banana; mashed |
3 | ts | Brown sugar; firmly packed |
2 | tb | Reduced calorie margarine; + |
2 | ts | Reduced calorie margarine |
1/4 | ts | Ground nutmeg; |
1 | ts | Rum extract; |
1 | Egg white; |
Preheat oven to 350. In a large bowl, beat all ingredients except egg white until smooth. Add a small amount of water if necessary, to get a smooth consistency. Beat egg white until stiff. Fold gently into sweet potato mixture. Spoon into a casserole that has been sprayed with a nonstick cooking srpay. Bake, uncovered, 45 to 50 minutes, until lightly browned.
