Title: Lemon, Honey & Walnut Cheese

16 | oz | Lowfat cottage cheese |
1/3 | c | Honey |
2 | tb | Fresh lemon juice |
1 | tb | Grated lemon zest |
1/4 | ts | Ground cloves |
1/2 | c | Toasted & finely chopped |
Walnuts |
In a medium bowl and using a wire whisk, beat together the cottage cheese, honey, lemon juice, zest, and cloves. Stir in the walnuts. Transfer to a container with a tight-fitting lid. Chill at least 1 hour before serving. The cheese keeps for at least one week in the refrigerator.
