Title: Zesty Mixed Cucumber and Sour Cream Dip

Yield: 1 1/2 cups
BURPEES EARLY SUMMER GARDEN | ||
4 | Pickling cucumbers, 4-5" long; peeled & finely diced | |
2 | sm | Dill pickles, 3" long; finely diced |
1/4 | c | Scallions; finely minced |
1 | md | Garlic clove; peeled, mashed |
1 | tb | Red wine vinegar |
1/2 | c | Sour cream |
1/4 | c | Mayonnaise; preferably home- made |
Salt | ||
Black pepper |
Combine all ingredients in a small bowl and mix well. Season with salt and pepper, cover, and let stand at room temp for 1-2 hrs. to develop flavor. Serve with an assortment of spring vegetables as a crudite.
