1 | Cucumber; peeled, seeded, halved, and cut into 1/4 inch slic | |
4 | Plum tomatoes | |
sm | Red onion; finely chopped | |
1/4 | Head green cabbage; thinly sliced | |
1 | Green bell pepper; washed, seeded and sliced | |
1/3 | c | Kalamata olives; pitted |
1 | tb | Coriander or parsley; chopped |
1 | tb | Oregano or marjoram; chopped |
pn | Salt | |
pn | Pepper | |
1 | tb | Greek olive oil |
2 | tb | Lemon juice |
Mix all ingredients together in a salad bowl and serve.
