Title: Spicy Cucumber Salsa

2 | Whole cucumbers -- seedless | |
2 | md | Shallots -- peeled and |
Minced | ||
1 1/2 | tb | Jalapeno pepper -- minced |
1 1/2 | c | Fresh mint -- loosely |
Packed | ||
Chopped medium | ||
2 | tb | Champagne wine vinegar |
1 | ts | Salt |
1/4 | ts | Freshly ground black pepper |
3 | ts | Olive oil |
Peel cucumbers in strips for a striped effect. Cut in half lengthwise; remove any seeds. Cut crosswise into 1/8-inch slices. Combine cucumbers, shallots, jalapeno and mint. In a small bowl, combine vinegar, salt and pepper. Gradually whisk in olive oil until combined. Pou over cucumbers and toss gently to combine.
