Title: Spicy Cucumber Salsa

Yield: 6 Servings

2 Whole cucumbers -- seedless
2mdShallots -- peeled and
  Minced
1 1/2tbJalapeno pepper -- minced
1 1/2cFresh mint -- loosely
  Packed
  Chopped medium
2tbChampagne wine vinegar
1tsSalt
1/4tsFreshly ground black pepper
3tsOlive oil

Peel cucumbers in strips for a striped effect. Cut in half lengthwise; remove any seeds. Cut crosswise into 1/8-inch slices. Combine cucumbers, shallots, jalapeno and mint. In a small bowl, combine vinegar, salt and pepper. Gradually whisk in olive oil until combined. Pou over cucumbers and toss gently to combine.
