Title: Strawberry Corn Muffins **

Yield: 12 Servings

3/4cStrawberries; finely diced
1/4cSugar
1tbOrange liqueur (opt)
3/4cFlour
1/4cYellow cornmeal
2tsBaking powder
1/4tsSalt
1 Egg; slightly beaten
1/3cMilk
2tbButter or margarine; melted

In small bowl, mix lightly the berries, sugar and liqueur. Let stand 15-20 minutes. In medium bowl, mix flour, cornmeal, baking powder and salt. Add egg, milk and butter to berries. Add to dry ingredients. Mix only until dampened. Spoon into 12 greased 2-1/2" muffin pan sections, filling about 2/3 full. Bake at 425~ for 15-20 minutes or until browned. Remove carefully from pans. Serve hot with butter.
