Title: Strawberry Corn Muffins **

3/4 | c | Strawberries; finely diced |
1/4 | c | Sugar |
1 | tb | Orange liqueur (opt) |
3/4 | c | Flour |
1/4 | c | Yellow cornmeal |
2 | ts | Baking powder |
1/4 | ts | Salt |
1 | | Egg; slightly beaten |
1/3 | c | Milk |
2 | tb | Butter or margarine; melted |
In small bowl, mix lightly the berries, sugar and liqueur. Let stand 15-20
minutes. In medium bowl, mix flour, cornmeal, baking powder and salt. Add
egg, milk and butter to berries. Add to dry ingredients. Mix only until
dampened. Spoon into 12 greased 2-1/2" muffin pan sections, filling about
2/3 full. Bake at 425~ for 15-20 minutes or until browned. Remove carefully
from pans. Serve hot with butter.
