Title: Chocolate Orange Muffins **

2 | | Oranges |
3 | oz | Bittersweet chocolate square |
1 | c | Sugar |
1/2 | c | Butter or margarine; room temperature |
2 | lg | Eggs; room temperature |
1/2 | c | Plain yogurt |
1/2 | c | Orange juice |
1 | ts | Baking powder |
1/2 | ts | Baking soda |
2 | c | Flour |
1/2 | c | Walnuts; chopped |
Finely grate peel of 2 oranges. Set aside. Either grate or chop chocolate
squares. Set aside. In large bowl, beat together sugar and butter until
light and fluffy. Beat in eggs, one at a time. Stir in grated orange peel.
Add yogurt, orange juice, baking powder and baking soda, beating well.
Batter will be thin. Stir in flour and chocolate, folding gently but only
until blended. Do not overmix. Spoon mix into 12 greased muffin cups.
Sprinkle with walnuts. Bake at 375~ for 25 minutes or until done. Cool on
wire racks. Muffins are best served warm.
