1 1/2 | c | Packed brown sugar |
2/3 | c | Oil |
1 | c | Sour milk or buttermilk |
1 | ts | Baking soda |
1 | ts | Vanilla |
2 1/2 | c | Flour |
1 | ts | Salt |
1 1/2 | c | Apples, peeled and diced |
1/2 | c | Pecans, chopped |
Topping: 1/3 c. sugar 1 tsp. margarine, softened Combine egg, oil and
sugar. Add milk to sugar mixture alternately with flour mixture. Fold in
apples and pecans. Stir well till blended. Combine sugar and softened
margarine. Line cupcake pans with cupcake liners, pour batter 2/3 filled
in each cup, top with sugar mixture. Bake 325 for 30 minutes. 12 muffins
