4 | tb | Peanut Butter |
2 | tb | Butter; or margerine |
2 | | Eggs; beaten |
1 | ts | Baking soda |
1 3/4 | c | Buttermilk |
3 | c | Flour; sifted |
2 | ts | Baking powder |
1 | ts | Salt |
1 1/2 | c | Bran flakes |
1/4 | ts | Sweeta; or sugar substitute |
9 | | Prunes; cooked/pitted |
Cream the peanut butter and butter together. Blend in eggs. Dissolve
baking soda in buttermilk and add to the butters. Mix and sift the flour,
baking powder and salt'; add to the first mixture. Stir in the bran flakes
and sweetener. Fill greased muffin tins 2/3 full and press 1/2 prune in
the center of each. Bake at 400 degrees for 25 to 30 minutes. Makes 18.
Note: You can use another garnish, rather than the prunes if you wish.
