Title: Spanish Coconut Muffins

1 1/2 | c | Flour |
1 1/2 | ts | Baking powder |
1/2 | ts | Baking soda |
1 | c | Grated coconut |
1 | ts | Orange rind |
2 | Eggs | |
4 | tb | Butter melted |
1 | ts | Vanilla |
1/4 | c | White wine |
2/3 | c | Buttermilk |
Chopped almonds |
Stir together dry ingredients. add coconut and rind. In separate bowl whisk all the liquids together. Quickly combine with dry ingredients. Spoon into 12 or 14 muffins cups and sprinkle with almonds. Bake 400 15 to 20 minutes or tested done.
