1 1/4 | c | Flour |
1/2 | c | Rye flour |
1 | tb | Brown sugar |
3 | tb | Baking powder |
1 | ts | Baking soda |
1/2 | ts | Pepper |
1/2 | ts | Allspice |
1/2 | ts | Celery seed |
1/2 | c | Grated raw potato |
1/3 | c | Grated raw onion |
1 | ts | Cider vinegar |
1 | c | Diced raw apple |
3/4 | c | Drained cooked sausage |
2 | | Eggs |
1 | tb | Sherry |
3 | tb | Melted butter |
1 | c | Buttermilk |
Mix together dry ingredients. Sprinkle grated potato and onion with the
vinegar. add to dry ingredients with apples and sausage. Whisk wet
ingredients together. Make a well in center of drys and add very quickly
the wet ingredients stirring quickly only to blend. Batter will be lumpy.
Fill into greased muffin cups and bake 375 20 to 25 minutes or lightly
browned. A main course muffin.
