Title: M-O-M's Muffins

Yield: 10 Servings

1 Egg, beaten
4tbShortening, liquid
3/4cMilk
3/4cMalt-o-MealŪ
1 1/4cFlour
1/2cSugar
3tsBaking powder

Mix all ingredients just until moistened; DO NOT overmix. Fill muffin cups 3/4 full. Bake in preheated 400-degree oven for 20 minutes. Variations: Add about 2 tablespoons of peanut butter, and/or chopped dried apricots, chopped prunes, or dates. I also have added 1-2 tablespoons wheat germ. Serving Ideas : For a healthy breakfast, have a muffin and milk or juice. Recipe by: Jo Anne Merrill
