Title: M-O-M's Muffins

Yield: 10 Servings
1 | | Egg, beaten |
4 | tb | Shortening, liquid |
3/4 | c | Milk |
3/4 | c | Malt-o-MealŪ |
1 1/4 | c | Flour |
1/2 | c | Sugar |
3 | ts | Baking powder |
Mix all ingredients just until moistened; DO NOT overmix. Fill muffin cups
3/4 full. Bake in preheated 400-degree oven for 20 minutes. Variations: Add
about 2 tablespoons of peanut butter, and/or chopped dried apricots,
chopped prunes, or dates. I also have added 1-2 tablespoons wheat germ.
Serving Ideas : For a healthy breakfast, have a muffin and milk or juice.
