Title: Mini Chocolate Chip Muffins

Yield: 36 Servings
Stir together | ||
1 1/3 | c | All-purpose flour |
3 1/2 | ts | Baking powder |
1/2 | ts | Salt |
1 | ts | Cinnamon |
1 | pn | Nutmeg |
Stir in | ||
3/4 | c | Rolled oats |
1/2 | c | Brown sugar, lightly packed |
1 | c | Chocolate chips |
Beat together | ||
1 | Egg | |
1 | c | Milk |
1/4 | c | Vegetable oil |
Add liquid to dry ingredients and stir only until combined (batter will be lumpy). Spoon heaping tablespoonful of batter into each well greased 2-inch (5cm) tart cup. Bake in 400F. for 10 to 15 minutes or until tops spring back when lightly touched. Makes about 3 dozen. Recipe by: Brenda McCaw
