Title: German Sauerkraut

5 | sl | Thick lean bacon ** SEE NOTE |
2 | md | Yellow onions, |
| | Peeled and sliced |
3 | qt | Sauerkraut in glass jars or fresh, drained and Lightly rinse |
1 | tb | Brown sugar - or substitute |
1 | c | Dry white wine |
1 | | Bay leaf |
12 | | Whole juniper berries or 2 Tsp. caraway seed--NOT BOTH |
| | Freshly ground black pepper to taste. NO salt. |
1 | c | Grated peeled potatoes -opt. |
Place all of the ingredients in a heavy kettle. Cover and simmer gently
for 1 1/2 to 2 hours. NOTE: By fresh sauerkraut is meant bought in a glass
jar or in a plastic gar in the deli section of the market. Canned
sauerkraut tastes like the can. **NOTE; If cholesterol ia a problem - leave
the bacon out.
If diabetic - you can also leave the potatoes out since that would add a
starch to the dish. It's good without the bacon and the potatoes.
