Title: Marinated Vegetable Salad

4 | c | Chopped tomatoes **SEE NOTE |
1 | c | Chopped celery |
1 | c | Chopped onion |
1/2 | c | Chopped green pepper |
3/4 | c | Red wine vinegar |
1/2 | c | Vegetable oil |
1/4 | c | Sugar (or sugar subst.) |
2 | tb | Poppy seeds (optional) |
1 | tb | Salt |

Combine tomatoes, celery, onion and green pepper in a large bowl. Toss
lightly. Combine remaining ingredients in a jar. Cover tightly and shake
vigorously. Pour marinade over vegetables. Cover and chill at least 3
hours. Yield: 6 to 8 servings.
