Title: Low-Fat Macaroni and Cheese

1 1/2 | c | Elbow macaroni |
2 | tb | Margarine |
1/4 | c | Finely chopped onion |
2 | tb | All-purpose flour |
2 | c | Skim milk |
2 | c | Low-fat cheese |
1 | md | Tomato, sliced |
| ds | Pepper |
| | Salt to taste |
Cook macaroni according to package directions; drain. For cheese sauce: In
a saucepan, melt margarine. Cook onion in margarine until tender. Stir in
flour, salt and pepper. Add milk all at once; cook and stir until thick and
bubbly. Cook and stir one to two minutes more. Add cheese; stir until
melted. Stir macaroni into cheese sauce. Turn into 1-1/2 quart casserole.
Bake at 350 degrees for 30 minutes or until heated through.
