Title: Catsup (For Diabetics)

Yield: 2 Cups
4 | Tomatoes, quartered | |
1/3 | c | Green bell pepper, chopped fine |
2 | tb | Milk red pepper, chopped very fine * |
1/2 | c | Malt vinegar |
1/2 | ts | Salt |
Non-nutritive sweetener = to 1 cup sugar | ||
1/4 | ts | Cinnamon |
1/8 | ts | Allspice |
1/8 | ts | Anise seed, crushed fine |
1/4 | ts | Ground mustard ** |
1/4 | ts | Powdered red pepper *** |
1/4 | ts | Mace |
* I have no idea what milk red pepper is. ** Not sure if this means dry mustard or ground mustard seed *** Possibly this means cayenne pepper. (Trish)
If using blender, fill 3/4 full with first 4 ingredients; blend about 3 to 4 seconds at highest speed. If not using blender, mix until pureed. Pour mixture into pan; add vinegar, salt, and sweetener. Tie spices loosely together in a bag of cheesecloth and add. Simmer, uncovered, until reduced by about half. Remove bag of spices.

NOTE:::: If I were making this recipe I think I would strain the
finished product thru cheesecloth to remove the bits of green pepper skin
and tomato skins. Or you could peel the tomatoes first and not worry about
