Title: Marinated Artichoke Salad

1/4 | c | Olive oil |
3 | tb | Fresh lemon juice |
2 | tb | Chopped parsley |
1 | tb | Minced shallots |
2 | ts | Dijon-style mustard |
1/2 | ts | Salt |
1/4 | ts | Tarragon |
2 | 9 oz pkgs. frozen artichoke hearts, thawed and drained | |
12 | Lettuce leaves | |
3 | Tomatoes, sliced |
Preparation: In bowl, stir together oil, lemon juice, parsley, shallots, mustard, salt and tarragon. Add artichoke hearts. Cover and marinate in refrigerator at least one hour. To serve, arrange lettuce leaves on platter. Top with artichoke hearts and tomatoes.
