Title: Garbanzo Burgers

Yield: 4 Servings
2 | c | Garbanzo beans |
6 | c | Water |
2 | tb | Oil |
2 | Garlic cloves, diced | |
2 | lg | Onions |
2 | Carrots, diced | |
3 | Celery stalks, diced | |
3 | Green peppers, diced | |
3 | tb | Tamari (similar to soy sauce) |
1/2 | ts | Sea salt |
1/2 | ts | Basil |
1/2 | ts | Tahini (sesame-seed paste) |
1/4 | ts | Paprika |
1/4 | ts | Oregano |
1/4 | ts | Cumin |
Soak garbanzos in water overnight. Drain, then place in pressure cooker with water; cook 1 hour. In large skillet, heat oil over medium heat. Add garlic, onions, carrots, celery and peppers. Saute 7 minutes. Season with tamari, salt and basil.
Drain beans and mash well. Combine with sauteed vegetables, tahini, paprika, oregano and cumin. Lightly oil a baking sheet. Form mixture into patties, set on sheet and bake at 350 degrees for 8 to 10 minutes, flipping halfway through. Makes 4 burgers.
