| | Calorie hot cocoa mix |
2 | tb | Quick cooking tapioca |
1 | tb | Sugar; optional |
| | Pn salt or cream of tartar |
2 | ts | Vanilla |
Blend egg yolks with 1/2 cup of the water in a nonstick saucepan. Stir in
cocoa mix, tapioca, sugar and remaining 1 1/2 cups water. Cook and stir
over moderate heat until mixture simmers. Remove from heat and cool. Beat
egg whites with salt or cream of tartar until soft peaks form. Stir vanilla
into tapioca mixture. Gently, but thoroughly, fold in egg whites. Spoon
into 6 dessert dishes and chill thoroughly. Per serving: Calories--71.8
