Remove apple cores but do not cut all the way through to the bottom. Peel a 1-inch strip around the top of each apple. Halfway down the apple, cut a 1/4-inch deep slit in the skin around the circumference; this will allow steam to escape without the skin splitting.
Place the apples in 4 (10-ounce) custard cups or around the edge of a 9-inch round cooking dish. (The dishes should be microwave safe.) Into the cavity of each apple, spoon 1 tablespoon of raisins or nuts, 1 tablespoon brown sugar and 1 teaspoon orange juice. Sprinkle with lemon juice and cinnamon.
Cover with plastic wrap turned back slightly. Microwave on High (100 percent power) for 6 to 7 minutes, repositioning individual dishes halfway through cooking time.
