Title: Creamy Skillet Potatoes

4 | md | Potatoes; peeled and cubed |
1/3 | c | Onion; chopped |
1 | oz | Pkg Ranch dressing mix |
4 | tb | Lite sour cream |
2 | c | Skim milk |
1/2 | ts | Parsley |
Precook potatoes in microwave until slightly tender. Spray large skillet with non-stick cooking spray. Brown onions and potatoes. When potatoes are golden brown, add all remaining ingredients and simmer until sauce thickens. Serve warm. Great side dish with almost any meal.
