Title: Joni's Test Cake

3cFlour
2cSugar
3tsBaking powder
1cOil
4 Eggs
1/2cOrange juice
1/2tsNutmeg
1cFruit;dried,chopped
1cChopped walnuts,pecans
  *Joni's Test*

1 1/2cSugar
3tsBaking powder
1cCanola oil
4 Egg beaters
1cDried fruit;chop can add 2c
1cNuts;chopped

Preheat oven to 350 degrees-Bake for 1hr and 15 mins for tube pan. Cream the sugar, oil and eggs with electric mixer until fluffy. Mix the dry ingredients together and alternate them with the Oj to the creamed mixture, then add the dried fruit and nuts. I Sprinkle the top of cake with a bit of cinnamon and sugar or make a topping of 2 tbs flour, 2 tbs butter and 2 tbs brown sugar, mix with fork until it crumbles and sprinkle on top of batter and Bake. Varity's: Use any dry fruit, raisins,apricots,dates or fruits such as Blueberries, Cranberries, Peachs, Apples etc. Found it ok Plain also. Grease and put paper in bottom of tube pan to help remove the cake from pan. This also is good to use as a Jewish Apple Cake. Pour half of the batter, than layer thin sliced Apples, sprinkle with cinnamon and sugar than top with rest of batter.Put some of the apple slices on top and sprinkle again with cinn-sugar mixture.

I was asked by our family Doctor to test the Canola Oil in a cake for him and did several version's. It worked out so well that I have used the Canola Oil and Eggbeaters in almost all my recipe's

NOTE: An update to this recipe that was tested back in 1989. I now also use Applesauce in place of the oil and have good results. I just find the cake is crumbly, but does not take away from the taste of the cake.
