2 | c | Onions; chopped |
4 | cl | Garlic; minced |
2 | ts | Ground cumin |
2 | ts | Oregano |
1 | ts | Crushed red pepper flakes |
1 | cn | Hot Enchilada Sauce |
| | Salt and pepper |
2 | lb | Lean ground beef or turkey |
2 | | Eggbeaters |
1 | c | Corn tortillas chips; crumbled |
1 | cn | Black beans |
3/4 | c | Hot salsa |
Preheat oven to 350~. Saute onions and garlic in oil. Add cumin, oregano,
salt and pepper. Add enchilada sauce. Add all to meat and mix. Add eggs,
beans, corn chips. Form loaf and put in dish. Top with salsa and bake for 1
