2cOnions; chopped
4clGarlic; minced
2tsGround cumin
2tsOregano
1tsCrushed red pepper flakes
1cnHot Enchilada Sauce
  Salt and pepper
2lbLean ground beef or turkey
2 Eggbeaters
1cCorn tortillas chips; crumbled
1cnBlack beans
3/4cHot salsa

Preheat oven to 350~. Saute onions and garlic in oil. Add cumin, oregano, salt and pepper. Add enchilada sauce. Add all to meat and mix. Add eggs, beans, corn chips. Form loaf and put in dish. Top with salsa and bake for 1 hour. Source: Lightly Ethnic
