Title: Golden Orange Pancakes

Yield: 12 Pancakes
3/4 | c | All-purpose flour |
3/4 | c | Whole wheat flour |
1/4 | c | Wheat germ |
2 | ts | Baking powder |
1 1/2 | ts | Sugar |
1/2 | ts | ;salt |
3/4 | c | Skim milk |
3/4 | c | Unsweetened orange juice |
1 | Egg; beaten | |
1/2 | ts | Grated orange rind |
Vegetable cooking spray |
Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine milk, orange juice, egg, and orange rind; add to dry ingredients, stirring just until moistened.
For each pancake, pour 1/4 cup batter into hot griddle or skillet that has been coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked. Yield: 12 (4-inch) pancakes (85 calories each).
