1 | lb | Sausage, spicy, smoked |
| | ;sliced |
1 | pk | Mushrooms, 8oz; sliced |
2 | cl | Garlic; minced |
3 | tb | Olive oil |
2 | pk | Collard greens, 10oz frozen |
| | ; thawed and well drained |
1 | tb | Italian seasoning, dry |
2 | cn | Tomatoes, chunky, Italian seasoned, 14 1/2 oz; undrained |
1 | lb | Penne or Rigatoni; cooked |
| | Parmesan cheese; grated |
Brown sausage in a Dutch oven; drain on paper towels. Set aside Cook
mushrooms and garlic in olive oil in Dutch oven over medium heat, stirring
constantly until tender. Add sausage, collard greens, Italian seasoning,
and tomatoes. Cook 10 minutes. Add pasta, and toss well. Serve with
