Title: Fettuccine with Lecso

3 | tb | Sunflower oil |
2 | oz | Lean bacon, diced |
2 | lg | Onion, finely chopped |
2 | c | Yellow pepper strips |
1 1/4 | c | Diced tomatoes |
1 | | Green chile pepper, cut into |
| | Narrow rings |
8 | oz | Fettuccine |
1/4 | c | Grated parmesan cheese |
Heat oil in frying pan. Add bacon and cook until crisp. Remove from pan and
drain. Remove all but 2 Tb fat from pan. Add onions and saute until
translucent. Add peppers, tomatoes, and chile pepper. Cook over low heat
for 15 minutes. Remove from pan and toss with bacon. Cook fettuccine
according to package directions; drain. Place pasta in heated serving dish.
Add vegetables and toss well. Sprinkle with Parmesan cheese, and serve.
