1 1/2 | lb | Boneless pork, diced |
2 | lg | Onions, chopped |
2 | tb | Peanut oil |
1 | cl | Garlic, peeled & chopped |
1/2 | tb | Lemon juice |
3 | lg | Ripe tomatoes, peeled& chppd |
1/4 | ts | Chili sauce |
1 | ts | Sugar |
1 1/2 | tb | Worchestershire sauce |
| | Salt & pepper to taste |
12 | oz | Penne |
1 | c | Grated Cheddar cheese |
1/2 | c | Salted peanuts |
Brown pork and onions together in oil. Add garlic and lemon juice; stir
well. Add tomatoes, chili sauce, sugar, Worcestershire sauce, salt, and
pepper. Simmer for 15-20 minutes or until pork is tender and throughly
cooked. Meanwhile, cook penne according to package directions; drain. Just
before serving, stir grated cheese and peanuts into pork mixture. Heat
until cheese is melted. Place penne in heated serving dish. Top with pork
mixture, toss well, and serve. Creative Pasta
