Title: Dories's Potato Salad

8 | md | Red potatoes |
1 | md | Onion |
1 1/2 | tb | Red wine vinegar |
4 | Egg, hard boiled | |
Mayonnaise(Hellman's), to moisten | ||
Salt and pepper, to taste |
1. Boil potatoes with skin on until fork tender. While potatoes are cooking(can boil eggs in with potatoes) grate onion and place in bowl. Add wine vinegar to onion - stir and set aside for at least 1/2 an hour.
2. When potatoes are done, drain and peel WHILE HOT(I think this is the secret.) Cut hot potatoes in quarters or eigths. Sprinkle heavily with salt.
3. Slice/dice eggs(I use mostly just the boiled yolk and throw out the white) add soaked onions.
4. Toss hot(warm) potatoes with mayo. It will absorb in warm potatoes. Tossing almost makes them mashed when they're hot. Make moist but not too much mayo.
5. Best if it sits in the fridge at least an hour to blend flavors.
