Title: Peanut Butter-Banana Pudding

3 | tb | All-purpose flour |
1/8 | ts | Salt |
2 | lg | Eggs; lightly beaten |
3 | c | Milk |
1 | ts | Vanilla extract |
1/2 | c | Creamy peanut butter |
12 | oz | Package vanilla wafers |
6 | md | Bananas; sliced |
8 | oz | Container frozen whipped top |
1/2 | c | Unsalted roasted peanuts; ch |
Recipe by: Southern Living 1993 Combine first 3 ingredients in a heavy saucepan; add eggs and milk, mixing well. Cook over low heat, stirring constantly, 25 minutes or until thickened. Remove from heat, and stir in vanilla.
Spread about 1/2 teaspoon peanut butter between 2 vanilla wafers forming a sandwich; repeat procedure with remaining peanut butter and vanilla wafers. Layer one-third of peanut butter-wafer sandwiches in bottom of a 3-quart bowl; top with one-third of custard over bananas. Repeat layers twice. Cover and chill. Spread with whipped topping; sprinkle with peanuts. Yield 8 to 10 Servings.
